Ingredients
1 gallon jar of homemade broth
1 onion, chopped
4-6 carrots, sliced
5-6 celery sticks, chopped
half a bag of frozen peas
a whole cooked chicken, cut up
1 1/2 cups of butternut squash, cubed and already cooked
1 1/2 cups beans, cooked
1 1/2 cups rice, cooked
Salt and pepper to taste
4-5 garlic cloves crushed
a small piece of ginger root, skin off and grated
Directions:
Pour the broth into a stock pot and add chopped onion. Bring to a boil. Reduce heat to simmer and add the carrots and celery. Putting the carrots and celery in first lets them have enough time to cook thoroughly. When carrots are almost soft, add the frozen peas, chicken, butternut squash, beans, and rice. Then, throw in the ginger root, garlic, salt and pepper. Heat through. Serve hot. Great for a cold day!
